Another thing I’ve forgotten since I don’t change magics that often anymore, but at what point is a person locked to their current magic/items in a job? Obviously you can’t change mid combat, but what if I changed it before combat starts? Would I be locked to whatever magic I started with from the moment I posted in the job? Or would I be able to get things approved before I get into any combat and still use them?

I would assume that once you've used a spell from a particular magic then that'll be one you'll have for the thread. In truth, approved magic isn't even needed for jobs anymore so you could probably use whatever you plan on the new one being, just make sure you actually buy the change at some point and have the one you don't want archived.

How do summons work as advanced spells, exactly? Are their abilities both summon’s rank advanced? Is only one advanced? Also, for the purposes of a summoning/celestial magic, do purchased summoning keys function the same as a pet would, gaining the extra abilities?

Summons normally receive 2 abilities equal to the rank of the spell slot used to create the summon, unless special conditions apply. In the case of an advanced spell, all abilities the summon naturally receives would, of course, be the same advanced rank as the summon itself.
Summoning keys cannot be linked to summon spells. They are locked to being equipment. Only pets may be linked to Summon spells.
